Restaurant Manager

Job Overview
The Restaurant Manager’s responsibilities include maintaining the restaurant’s revenue, profitability, and quality goals. You will ensure efficient restaurant operation, as well as maintain high production, productivity, quality, and customer-service standards. To be successful in this role, you will need management skills and experience in both front and back of the house. You will need to know how to oversee the dining room, check-in with customers and balance seating capacity. You will be expected to lead by example and uplift our staff during busy moments in our fast-paced environment. Ultimately, you will ensure our restaurant runs smoothly and customers have pleasant dining experiences.
Job Requirements
- Coordinates daily Front of House and Back of House restaurant operations
- Responsible for training and discipline for all managers reporting directly to you
- Demonstrates knowledge of all menus
- Coordinates with Kitchen Manager on menu development
- Delivers superior service and maximize customer satisfaction
- Responds efficiently and accurately to customer complaints
- Regularly reviews product quality and research new vendors
- Appraises staff performance and provide feedback to improve productivity
- Ensures compliance with sanitation and safety regulations
- Manages restaurant’s good image and suggest ways to improve it
- Controls operational costs using mandatory control forms such as Meat Count Form, Daily Prep List, and inventory; identify measures to cut waste
- Creates reports on weekly and monthly annual revenue
- Trains new and current employees on proper customer service practices
- Creates an environment where cooperation and teamwork are top priorities
- Maintains ambiance by controlling lighting and background music
- Strictly adheres to all state and local alcohol laws
- Maintains safe, secure, and healthy environment by following and enforcing sanitation standards and procedures, complying with legal regulations securing revenues, maintaining the parking area and walkways
- Has the ability to stay professional and level headed to resolve guest complaints
- Arranges for all equipment maintenance and repairs
- Monitors all marketing online (i.e. Trip Advisor and Open Table) and coordinates with the Marketing Manager
- Implements policies and protocols that will ensure smooth restaurant operations
- Has the ability to adapt to a constantly changing environment

Qualifications
- Must possess a minimum of 4-5 years of applicable experience in the restaurant industry
- Ability to work flexible hours, including nights, holidays, and weekends

Kitchen Manager
Job Requirements:
Reports to General Manager and completes assigned duties.
Job Description:
Ensures restaurant is optimally staffed and employees are fully trained, and duties properly delegated in all aspects of current job. Completes required documents for new hires and terminations, disciplinary forms, and evaluations.
Demonstrates a positive cooperative attitude with the front and back of house staff, and Paulette’s and Terrace personnel. Leads staff with respect and professionalism. Refrains from the use of profanity.
Has complete knowledge of policies and procedures.
Food Quality/Cost Control/Menus:
Ensures that all menu items are made according to recipe and presented according to pictures. Any changes to the traditional recipes/plating must be approved by management.
Adheres to the operational basics and standards such as Prep Lists, line checks, testing, training, orientation, current recipe adherence, window management, cook times, plating presentations, and table visits.
Creates the weekly Monday Night $23.95 menu. The Monday Night menu must be written 2 weeks in advance.
Changes lunch, brunch, bar, and dessert menus every quarter using fresh, local, and seasonal ingredients.
Revise the following banquet menus as needed: Reception, Snacks, Lunch, Dinner, Brunch (plated and buffet), and Dessert.
Adheres to company standards and service levels to increases sales and minimize costs, including food, labor, supply, utility, and labor costs.
Adjust schedules to meet budgeted labor cost.
Oversees food orders, and orders with purveyors within established guidelines. Obtains weekly competitive pricing from vendors. Researches and establishes relationships with local vendors.
Establishes par levels and uses Food Order Forms to ensure adequate product is on hand.
Completes daily count of high-cost proteins such as Filets, Rack of Lamb, Crabmeat, Lobster, etc. Compare actual usage to Micros and ensure there is no loss of product. Use of the Daily Meat Count form is required.
Completes Monthly Inventory on the last day of each month.
Cleaning and Sanitation:
Ensures sanitary practices and maintenance of the entire kitchen. Writes and enforces daily/weekly cleaning schedules. Ensures compliance with operational standards, company policies, federal/state/local laws, and ordinances; ensures all health inspections meet required state standards. Maintain a minimum score of 90.
Keeps walk-in cooler and dry storage areas organized.
Other Responsibilities:
Meets with the restaurant and catering managers weekly to discuss and plan banquet menus and execution.
Attend weekly manager meetings.
Meet with front of house staff at nightly pre-shift meeting at least twice a week.

Job Overview
The Bartender is a professional, high-energy person with excellent communication skills. This person will serve beverages to our customers. The Bartender will greet customers, learn about their preferences, answer questions, recommend menu items, and prepare and serve beverages and food. You will also upsell items, utilize proper equipment and ingredients, and handle basic cleaning duties. To succeed as a Bartender, you should have a neat appearance and engaging, friendly personality. You should be efficient, observant, knowledgeable, and personable.
Job Requirements
- Welcomes customers upon arrival
- Reads and listen to people to determine beverage preferences, making recommendations if necessary
- Prepare rinks and mixes per the recipe. Use provided guides and jiggers
- Avoid breakage, spills, and over pours; help in controlling costs
- Reports all returns and spills on form
- Checks identification to ensure customers are of legal drinking age
- Takes inventory and ensure bar is fully stocked at all times
- Ensures accurate ringing of items into Micros point of sale system
- Maintains a clean work and dining area by continually removing trash, cleaning bar area, washing glasses, utensils, and equipment
- Have a general knowledge of menu items, local entertainment/events, and other general River Inn information

- Prepares all dishes using recipes and proper portions

Dishwasher
Reports To

Job Overview
The Dishwasher’s duties include thoroughly washing soiled dishware, flatware, glasses, and kitchen equipment. You may also restock items, unload delivery trucks, help prepare cook stations, clean appliances and machines, empty and clean trash receptacles, and other duties, as needed. To be successful as a Dishwasher, you should be a committed, communicative team player with excellent time management skills. You should be able to prioritize tasks in a busy setting and adhere to all food safety regulations and procedures.
Job Requirements
- Ensures the availability of clean dishes by timely washing dishes, flatware, pots, pans, glassware, etc
- Cleans machines and appliance used in the kitchen such as coffee makers, mixers, banquet equipment
- Unloads and restocks deliveries
- Regularly sweeps and mops the floors, especially in the event that items are broken or spilled
- Regularly takes out the trash and rinses out garbage cans
