Timeline
- 1974 George Falls opened Paulette’s with Paulette Fono, a Hungarian immigrand and founder of Magic Pan
- 1979 George purchased Fono’s share, partnering with Frank Flautt and Jeff Mann.
- 1984 George bought out Flautt and Mann.
- 1984 Don Eschelweck hired as General Manager. Don eventually assumed the roll of Operating Partner. Don was active in managing Paulette’s until going into semi-retirement in April 2023.
- 2011 (March) Paulette’s moved from Overton Square to the River Inn.
- 2023 (October) George Falls died.
Menu Evolution
Paulette’s original menu included many Hungarian and French dishes, including Hungarian Gulyas, Crepes, and Coquille St Jacques.
Most popular and original menu items: Ham Palacsinta, Chicken Brochette, K-Pie (aka Kahlua Mocha Parfait Pie), Strawberry Crepe Delight, and Popovers with Strawberry Butter.
Past Popular menu items: Hungarian Gulyas, Cheese Soup, Florentine Souffle Crepe, Crepes a la Bretonne, Coquille St Jacques, and Paulette’s Hot Chocolate Crepe.
As diners’ tastes and dining trends changed, the menu reduced the emphasis on crepes and heavy sauces. Steak, grilled fresh fish, and salads were added.
